Bread

Favourite recipe that can be used for almost anything - Pizzas, Foccacia, Pita pockets, Flat bread or even just BREAD!!!

Ingredients:
1/2 cup sugar
1/4 cup yeast
1kg flour
extra flour for dusting
approx 800ml above luke warm water
Good pinch of salt

Combine all dry ingredients, gradually add water. 
Knead continually until very tacky and moist consistency is achieved and all flour is combined.
Dust with extra flour and leave in warm place until doubled or tripled in size (approx 25mins)
Tip onto clean floured surface
Liberally dust again with flour and knead until soft and elastic.
Divide into desireed shapes and sizes (add any flavourings eg: rosemary, olives, cheese, olive oil, bacon, currants, cinnamon etc)
Place on baking trays
Return to warm place until doubled in size again or until reached desired doneness.
Place in preheated oven and cook (approx 25-30min) until crispy on top and when flicked on bottom, hollow.

Mmmmmmmmmmmmmm the smell is divine!!

Carrot Cake - Fat Dog

Ingredients:
  • 1 cup oil
  • 1½ cups brown sugar
  • 3 eggs, beaten
  • 2 cups grated carrot
  • 1¾ cups flour
  • ½ tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup walnuts
  • ¼ cup sunflower seeds
Icing
  • 250g carton cream cheese
  • ¼ cup icing sugar-sifted
  • 1 tsp finely grated lemon rind
  • ½ cup toasted muesli
Method:

Line a 20cm cake tin with baking paper and heat the oven to 180°C.

Beat the oil and sugar with a wooden spoon. Add eggs and carrot and mix well. Fold in the dry ingredients, nuts and seeds and spoon into the prepared tin. Bake for 1 hour.

Mix the cream cheese, icing sugar and lemon rind. When the cake is cool, ice and sprinkle with toasted muesli.

Best ever Choc Chippie Biscuits (Thanks Nana)


What's in them:
  • 125g Butter
  • 1/2 C Sugar
  • 1 Tbl Condensed Milk
  • 1 tsp Vanilla Essence
  • 1 1/2 C Flour
  • 1 tsp Baking Powder
  • 50g Chocolate chips bits or whatever - don't be fussy and don't worry if you have to guess this bit!

What to do:
Cream butter, sugar and condensed milk (cream until its white). Add essence then dry ingredients. Add chocolate. Put spoonfulls onto greased trays, flatten a smidge.

Bake 20 mins at 180 degrees C.

Hummingbird Cake

Stuff to put in it:
3 C Flour, 2 C sugar,1tsp each baking soda, salt, ground cinnamon. 3 eggs, beaten, 3/4 C vegetable oil, 1 1/2 tsp vanilla essence, 1 can crushed pineapple (about 250g) undrained, 1 C chopped walnuts, 1 3/4 C chopped ripe bananas

What to do:
Preheat oven 180 degrees C. Combine flour, sugar, b soda, salt & cinnamon in a large bowl. Add eggs & oil. Stir until dry ingredients are moist (no beating). Add vanilla, pineapple, walnuts & bananas. Pour into tin.
Bake for 1 1/4 hours.  Cool 10 mins before remving from tine.  Ice when cold with Cream Cheese icing - 1/2 cup soft butter, 250g cream cheese mixed until smooth - add 500g icing sugar & 1 tsp vanilla.  Beat!
